Squash Patties......YUM

We have used zucchini or patty pan squash for this dish.

Six squash, grated, drained and squeezed thru cheese cloth. DRY
One egg yolk
Bread crumbs or Panko
Grated cheese

Combine into patties and fry in oil

Makes about 6

Got to love fried squash.. been eating allot from the garden this year

we do simular .... slice, dry, dip in eggs, dip in crushed cornflakes, then bake. fried sounds better on most days, just trying to watch the fat intake so we bake. we had fish, squash tonight. we do regualrly with egg plant also .... try on green tomatoes also.

We just slice them and use the same stuff as you for coating and fry the slices. I could eat a ton of them. Eggplant too!

Yum's the word, all right!

I'm bettin those would be good on the grill; perfect match for my handy dandy perforated pan. (Greased using a slice of bacon, of course...)
