I skinned and removed the bone fron a couple chicken thighs. Pounded them thin and sprinkled with rub. Cut up some jalapeño, onions.
I used a bowl as a form, and lined it with bacon, and added the chicken thigh.
Filled with the onion and jalapeño, and added some xs-cheese I smoked as well as some blue cheese.
I used the loose ends of the bacon to wrap them up and secured the top w toothpicks.
Put them on the pellet smoker for hr and a half @225*
Then cranked the temp to 500* and put them back on for a few minutes to crisp up the bacon. The came out great. The combo of flavors was incredible. Better yet, my DW loved 'em.
