Had leftovers and made this, it was quite tasty
Curried Potato Salad
2 cooked white potatoes
2 cooked sweet potatoes
(baked or boiled or microwaved, cooled)
1/2 cup mayo
1 Tbsp fresh lemon juice
1/2 tsp lemon zest
1/2 tsp curry powder
1/2 tsp dried coriander
1 packet of sweetener or equivalent
fresh ground black pepper
Mix all the dressing ingredients (everything except potatoes)
Cube potatoes and toss.
If you're adventuresome toss in some raisins, chopped celery, green onions, whatever.
My guess is you could probably use half mayo and half low fat/sugar free lemon yogurt, too, and leave out the packet of sweetener.

hmmm, dried cranberries and maybe walnuts would be good stired in, too. A little antioxidant!
