Eggplant Parmesan. Stir fry with marinated tofu. Vegetable lasagna, weight watchers cabbage casserole with fake meat crumbles, Shepard pie with fake meat crumbles.
Quiche once a month.
Pizza with Mozzarella, fresh tomatoes, fresh garlic and basil is great.
Stuffed peppers or squash using quinoa instead of meat is good..
