My husband is one of those guys that hates just about anything new, so no one was more surprised than I was that (having been forced to try it) he actually likes TOFU!
Handled right it's a really good substitute for meat. I often just cube it and add it to soup, for example...another one of our favorite ways to eat it is marinated and then baked or sauteed. Any marinade will do, but here's a tip on getting best results for this method:
Buy firm or extra firm, drain water, slice it into desired shapes and freeze. When it's thawed it will not only have changed to a sort of cream color, but the texture will have become much "chewier". It holds its shape much better after this treatment, and soaks up the marinade better, too.
Tofu prepared this way can even be grilled- yum!
