I'd shut off the water, disconnect and put away the hose, turn off the A/C and that's it. No need to empty any tanks unless the Black Tank is due.
Putting away the hose eliminates the temptation for someone to `accidentally' turn on the water and have a leak in the RV for two weeks.
I changed my mind: leave the A/C on at 75 as others have suggested.
