If the dealer looked up and gave you 3500 per the vin number, then they should be right.
What you have going against you are, motor, rear axle ratio, weight of the vehicle full of fuel and all occupants on board.

Yes, go with the vin. The website lists 6200 with disclaimer "if properly equipped." Doesn't say what proper equipment is, only "see dealer for details." IMO they should provide more info on the website. Looks nice, just not much of a tow vehicle. Be interesting to know specifically what is different to get to 6200.

I made another phone call to a different jeep dealer, gave them my vin and they told me 6,200 lbs. That my vehicle has the upgraded cooling system. Thought cooling systems didn't change the towing capacity.

It is within the 'losses' of doing work...you get 'hot' when 'working' out

Your body has thermal management in the form of sweating, panting, etc to manage your body temp. Of which has a 'range' that it is designed to work within. Too cold and too hot will put your body out it's specification for thermal range it works best at

Same thing for any vehicle.

Plus they 'burn' fuel to do do that work, but that is an oblique to your question

In doing that 'work', your TV has losses to deal with and those losses come in the form of 'heat'. Frictional, pumping, etc any kind of resistance it has to overcome

Your body will reject that generated heat via sweat, pant, radiate from the skin, etc

Your TV will reject that generated heat via radiators, surface differentials, etc, etc

That is all part of the 'duty cycle' your OEM's designers dialed in, tested to and certified to via the specifications. Of which your warranty is based on

Another part of that missing in this discussion is the gear ratio's involved that contribute directly to your question

Higher numeric ratios (lower gears) will have multiply the engine's torque more...therefore will have more power...

Those are the basic's to the answer to your question...there are many other attributes...

I don't see any ambiguity - it clearly says that for a 2018 Grand Cherokee with 3.6L in Limited trim it's 6200 lbs, with or without the tow package. For some other configurations, it's a 3500 lb limit, and on some of those the tow package brings it up to 6200 lb.

missing is the differential gear ratio...it is NOT listed on that linked page

Most/many 'tow packages' will NOT have the MPG diff ratio (lower numeric), but a higher numeric

All things equal will have the lower numeric (lower gear set) have a higher GCWR for the same TV

What’s your payload? What will you be carrying in the Jeep? You’ll reach that limit first IMO.
