I have a reese dual cam from the days of towing with a Nissan Armada. Now that I have the proper truck, what shank will work with the Reese Dual cam and a 2017 Ram 3500 SRW? I am getting a lot of sway...

I'm betting the sway control arms need to be re centered in the spring bars. If they're not centered, it can be twitchy as both cams counter each other trying to center themselves.
