It happens.
The overwhelming majority of the time it has zero to do with "alpha" nonsense (at least on the dog's part).
Was pain involved (for the dog)? Arthritis or something like that? Or does he have some sort of fear/anxiety related to having his paws touched?
Good for you for realizing that he was telling you loud and clear "this is making me extremely uncomfortable" in one of the very few ways of communicating he has available. You get what many people never will.
