Whatever you tow, and whatever you tow with, you can expect average of 10. Most folks report 8-12 MPG. I get 11 mpg with my Sierra towing a trailer that's about 4700#. That's at 62 mph. I have pretty much the same drive train as you expect I have 4WD. My truck doesn't break a sweat towing my trailer.
That said, while the TC is may be listed at 7000# you most likely won't be happy towing that much weight. The tongue weight will eat up most of your payload only leaving you a few hundred pounds to account for any gear in the truck and any passengers beside yourself. You'll probably be a lot happier looking for a trailer that's under 6000# GVWR. You should be able to find a suitable TT in that weight range at 24'.
TNX, my truck is rated for about 750O# according to what I see. In the past with 5th wheels and one standard travel trailer I have found that if you limit yourself to around 80# of what the tow vehicle maker's claims are that I was much happier towing.
Maybe a 22-24' unit will fit our needs.
