Thanks everyone! Lots of creativity here. I'll post some photos of my countertop set up.
On the countertop over the fridge I keep a small folding aluminum chair that I use as a shelf. Put an electric fan on top, and fruit and veggies underneath. I also put a power strip up there to charge my devices. I don't use my water system, so in the sink I keep miscellaneous cooking tools, and use it as a temporary storage for trash and recyclables.
In the morning, I use that counter space for my coffee grinder, electric kettle, thermos and Melitta drip cone. Sometimes I'll go outside and boil my water on the camp stove, but it takes 3 times as long. During the day I store those things in the cupboard next to the fridge.
On the other side, the countertop over the microwave holds another fan, and a basket where I keep keys, small flashlight, dog supplies, and other misc.
So my countertop space is already occupied.
If the weather is really nice, no bugs, I can sit outside and don't plan to have guests, I can leave the bed folded down and keep clothes under or on top of it. I do keep a gym bag with biking clothes and running clothes in the truck.
I think you have to be a little OCD to camp in an Aliner! But I sure do love how easy it is to use.
