For the capacity question, on 6.4 vs. 6.7 the answer is easy. 250/2500's are typically capped at either 9,900 GVWR or 10,000 GVWR. Diesel weighs more so it eats more into the payload rating. That's why if you want a diesel, you should really consider a 1-ton for payload if your state doesn't have special licensing/insuring requirements for vehicles over 10,000 GVWR. For the 5.7 vs. 6.4, that's Mother Mopar's call.
