I've never taken the camper off to launch either, and if the ramp is wide enough I'll drive down head first and circle at the bottom. The camper feels top heavy and it feels like it's going to tip over, but if you're just idling around the turn at the bottom of the ramp you'd be surprised at how much of an angle it'll take.
On less steep ramps my biggest problem is keeping the lower rear overhang of the camper out of the water. I really don't want the camper to get wet. For temporary use I've used an extra 18" hitch extension to give me more length.
Also, I have a camera mounted above the door and displaying on the dash, but backing the boat in the water I tend to use my side mirrors more and just glance at the camera. It might be that I'm just not used to the camera that much - for 20+ years I only had mirrors. :)
