V-10 isn't an option in the F250/350 line. Only the 6.2L V-8 & 6.7L diesel.
6.8L V10 can still be had in the chassis cabs.
I cannot speak to mileage with the V10, but my 2017 F250 with the 6.7 has averaged 16.8 since new (nearly all uploaded since we bought in late fall, and have not been out with the trailer this spring) according to the computer, and is often in the low 20's at 70 MPH, between regeneration of the DPF. Those unfortunately bring a tank average back to above 16.5 - 17 range.
With the V10, I suspect you will be lower in the normal highway cruising, but you will not suffer the 10 MPG regens either.
