Late November can mean snow and ice. However, SLC to Moab is highly traveled and well maintained. Soldier Summit has some altitude and can get jammed up. From Moab to Monticello you gain altitude and thus the possibility of stuff on the road. Monticello to Cortez takes you from 7000 ft. to 6000 ft. so depending on how recently there has been snowfall there could be some challenges. Once again, this is a highly traveled route for trucks, so it is well maintained. I'm sure you know this, but both Utah and Colorado have excellent phone apps and internet sites that are up to date on road conditions. If it's been a couple days since snowfall you'll be fine.
