Leave faucets open?

Wait, are you connected to a pressurized system, and a sewer, or are you operating water from a holding tank, your 12 v pump and then into a grey tank?

Completely disconnected. It's been about a month since we were hooked in to city water. It's been parked since then.

IF you are not using trailer and have no plans on 'winterizing' then you are asking for trouble.
Temps can get low enough inside to freeze standing water in plumbing system
Secure/disconnect any water source
Drain water heater
Open ALL faucets (Hot & Cold)
Open low point drains
Open fresh water tank drain

Doing the above will drain most water from system....allows for any expansion.
And only takes a few minutes to accomplish OR reverse when going to use trailer.

Has that faucet been opened after disconnecting? If not, it could have remained pressurized. If temps got below freezing, a fair amount of pressure increase could have happened, causing a leak. Another possibility is that the trap leaked and the faucet had never been opened.

One other possibility is the toilet supply line is leaking occasionally. I had that happen. Water would follow the supply line back down toward the floor and deposit a small puddle of water right before the line went under the vanity. Couldn't catch the supply line wet to save my life until I finally got lucky one day.

Even around the house, it is the fix-it category that I hate most. I just paid $200 labor to have a water softener put in because the process of pipes and leaks scares the******outta me.

I'm pretty sure we did indeed leave pressure in the lines after leaving the last campground. We're new to this type of camping (previously pop-ups) so did I incorrectly assume that unhooking the fresh city water hose lets the pressure out?

Just do what 'old biscuit' said ...takes 2 minutes and piece of mind. plus gets rid of old water that may turn stinky. put some non tox or windshield anti freeze in the traps so the water in the traps won't evaporate and leave a smell..
drain your fresh water tank too and flush toilet to relieve that pressure also.

Disconnecting the water hose does nothing to the line pressure inside RV because there is a check valve in that city water connection......so water doesn't squirt out thru it when using the on-board pump (same system---just different water sources---pump has an internal check valve so water doesn't go back thru pump into fresh water tank when using city water connection)

SO whether you use city water connection or the pump the plumbing system is pressurized until you relieve the pressure by opening a faucet---hot and cold sides

And if you have an outside shower don't forget to open/drain it when not using RV in cold weather.
