That is faucet I have seen on boats, but never in camper.
Likely there is no pressure switch on the system, so restricting water flow might end in overheating motor and consequences.

Once you advice that we don't have to observe common sense, you don't know who next will read it and take it to next level ;)
I was buying on-demand pumps for $39 and for water saving have those tips that close the water unless you push a stick hanging from the tip.
Those can save you quite a bit of water and for me are more convenient than playing with handle or knob.
