Single Over Double Bunkhouse TT

It might be time to say good bye to our 2004 R-Vision Trail Cruiser 21RBH in favor of something without the wet canvas (not ideal here in the PNW). 
My kids (and I) like the single over double bunk situation that we have now as it gives them space for playing, sitting up in bed, and generally moving about. It’s hard to search for these specific campers though. Especially older models. We don’t need anything brand new, but maybe 2010 or newer?

Looking for TT that meet the following specs:

-towable by a Toyota Highlander (5,000 lb capacity. We get by right now with a HTT with a dry weight around 3,000. Less than that would be even better.)

-sink in the bathroom

-no couch

-dinette (u-shaped would be lovely)

-twin over full/single over double bunk beds

-no preference to slides (the lighter the better, though)

-indoor kitchen

-sleeps 4-5 without the using the dinette as a bed. 

don’t care about: 

-size of the grownup bed—we’re short

-fancy gadgets

-outdoor kitchens
