I'm getting quotes for tires for my 26'TT for both 6 and 8 ply. The brand Master Track keeps coming up. Was quoted $325 OTD for 8 ply which seems very reasonable. Any comments or experience with this...

Good for you. Many travel trailers including my own don't have room for LT truck tires which I would happily run if I had room.
The LT215/75-15 Goodyear Wrangler HT tires need only 3/8" more clearance than your ST205/75-15 tires.
