You've got a pretty good handle on your numbers. The surprising part is going to be in how much you and the family are actually adding to the weight. Don't forget the weight of the youngster's booster/car seat.
My family's weight is about 640 pounds, but at the end of the day - we knock 1,200 pounds off of our payload capacity when we're ready for travel (though, we have a gooseneck/fifth hitch setup that likely weighs in the 250-300 pound range). But, still - there's a lot of "stuff" that gets added to the vehicle weight before you really realize it.
Good luck! I like the above recommendations of a 2500-3500 size van and it looks like Bryan is pretty well versed in this stuff.
It's not ideal, but is taking 2 vehicles an option?
