I would still try and find a 2500 or 3500 passenger van. It will give you the towing capacity and room for the family.
X2
1st off I have NO experience towing with a van as of yet, BUT I do have 6 kids all under 12 yrs of age and "ROOM IS KING"
I own a Chevy 3500 15 psg van with 4 sets of bench seats, 2 kids per row (each hold 3)and the last row (holds 4) removed for groceries. having said that still gives you room for 3 more family members or friends of the kids.
Or remove one more of the bench seats and put the kids on two rows "if they get along ;)" and have more room for extra gear, The possibilities are endless.
not to upset the FORD fans but the 15 psg Ford vans are UNSAFE PERIOD ford NEVER extended the frame they ONLY extended the body.
Chevy/GMC extended the FRAME and has a much safer van IMO.
Whatever you choose enjoy the experience
