The new Edge can be rated upto 3500lbs towing.
Specs for Toyota Highlander Hybrid are 3500lb towing. Toyota Highlander regular gasser V6 can top out at 5000lb. The tow capacity usually includes all onboard fuel, people and stuff.
I'm not a fan of turbo gas engine towing. I'm really not of a fan of gas engine direct injection. Last I heard there is still no Ford authorized induction cleaning authorized. Given your listed choices I'd go with the normal Gas V6 Toyota Highlander. It's also listed as an IIHS Top + Safety pic.
Ask around if the Ford Ecoboost is delivering fuel mileage as promised? The few people I know with Ecoboost are not getting anywhere near the promised mileage. The fun factor appears to be high, gas mileage low.
Edit: Remembered the new Pilot. It has an optional 9 Speed transmission. Unknown what configurations arrive with it. If it's the same as the Jeep and Acura 9speed transmission, RUN!!!!!!!!!!!! YOU DO NOT want this transmission.
