Unfortunately Light campers are just large sails when it comes to wind. A heavier vehicle might make you feel safer but slower speeds are the only thing that will prevent a camper from flipping if winds pickup.
I would buy two. I like to wear tires in pairs. I believe keeping tread depths even on drive axle is best for life of tires. Other wise the tire thats worn more will wear faster than the other side.
