I like all the crunchies and flavor from the olives and pickles. Feel free to cut the recipe down as full one makes a LOT! CAJUN PICNIC POTATO SALAD "Serves 8 Cajuns or 24 other peoples for a good picnic." 10 lb potatoes 2 pints (4 cups) mayonnaise 3/4 cup yellow mustard Louisiana hot sauce (or Tabasco sauce), to taste Salt, to taste 2 cups dill relish 2 cups chopped green olives 2 cups finely chopped onion 1 cup finely chopped celery 1 cup finely chopped fresh parsley 1 cup sweet relish 8 hard-boiled eggs Boil potatoes in their jackets. Let cool, then peel and chop into large chunks. Mix mayonnaise, yellow mustard, Louisiana hot sauce, and salt together. Add potatoes, along with the rest of the ingredients, and mix well. You can make this the day before and refrigerate it overnight. You may need to put a little more dressing on it if it is a little dry. Turkey Sandwich. 2 Slices of good quality white sandwich bread. Potato Bread or ? Several slices of roasted turkey. I like the dark meat. 1 Heavy slathering of Mayonnaise. Best Foods/Helmans 1 Green Onion, chopped Salt and Pepper YUM OH!Re: Adding water to frying bacon??Yes, I have been doing this for a couple of years. If you want crumbly bacon to crumble on your salad, no water. If you want chewy delicious bacon with your eggs and potatoes, then put the bacon in a cold pan with a little water. The water helps render the fat and plumps the bacon, and the bacon is chewy and tasty. Definitely worth the extra couple of minutes it takes for the water to evaporate.
