I soaked it in a salt spice brine overnight. I seared it at 500* for 15 minutes on each side with the chimney open all the way and then brought the temp down to 160* for 7 hours with the chimney just cracked. I flipped the meat twice during the 7 hours. The meat was at 155* then and we were getting hungry, so I brought the temp up to 255* to finish it off and got the meat up 172* in another 30 minutes. The last 30 minutes I put a little BBQ sauce on it too. I don't know if this is the right way or if there is even a wrong way with a smoker like the GMG. The pork sliced easily with a knife and once in slices was easy to cut with a fork (even at an inch thick). I used cherry wood pellets. Looks and sounds great, you're going to get some outstanding food from your GMG. If I may give you one tip, always cook with the chimney damper wide open. GMG recommends it because of the way the air flows and it helps keep temps even across the cooking area. Yep...it looks very familiar. We enjoyed our stay. As far as narrow sites, we've seen a lot worse as we traveled. We didn't find them narrow. You're welcome, my wife took the pictures for their site. We spent six weeks there last year and we're going to be there for three months this year. That puts the Rec Tec RT-300 at $300 more than the DC. That's darn near twice the price. Don't I care to spend $700 to try something I'd really get into. I haven't heard about a six year warranty, nothing like that was offered to me when I bought mine. It does have a two year warranty. They also have a 30 day return for full refund policy if you are not happy with it. The construction and quality is much better than my Davy Crockett. The Davy Crockett is a very good grill for traveling and it cooks well once you learn it. The right side can be as much as 70 degrees hotter than the left. Some are not that bad but both of mine were that way. It also sits very low when you use the legs, if you are going to use it at home you would want to put it on a table or stand.Re: Traeger vs Green MountainGreen Mountain Grills makes a very good product. I used a Davy Crockett for several years, it travels in the MH very well. If you want something for your home but not too big look at the Rec Tec T-300, I just bought one to replace my Davy Crockett. It's very high quality and a bit larger than the small GMG or Traeger, well worth the little extra in price.Re: Able to watch home networks anywhere! TV is not the main reason we have those data plans, TV to us, is not that important. We got them when they had the GB war a year or so ago. We don't pay THAT much more than our "Premium satellite service" cost us at the time. It sounds like the OP is aware of and has a handle on his bandwidth situation. It's not a bad solution for him at all, just depends on how much TV you want to watch I guess.
