Your post proves that if you see something that just might be worth a picture, take it. You can't show 'I should have' to anyone. You never know when you get that unusual shot.
We carry 3 cameras. The phone & tablet do not count. We have a decent pocket camera that is always, well, in a pocket. We have a super zoom through the lens view that is too big for the pocket but still pretty handy. Last but not least we carry a SLR for those shots that you want to be just right & you have the time.
We are looking forward to going back to Alaska for our third time this year. Who knows how many thousands of pics we will take.
