Well I would be looking for a way with the fewest high passes to go over since those uhaul trucks are not known for their exceptional mountain climbing ability.
I would be thinking I 70 west then get up on I 80 either via I-25 or some other way so that you are on 80 by the time you get to Cheyenne. then I 80 across to I 84 then up I 5. Wont be the most scenic route for sure but you will have good road and decent traffic in case something goes wrong and I think you will miss all the high mountain passes. Only one of a hundred different ways to get there though.
