I would drive on Hwy 101 from LA to Santa Barbara and continue up Hwy 101 to Morrow Bay where I would continue on Hwy 1 to Monterey and then back to Hwy 101 and continue on Hwy 101 up to Newport, Oregon, and then head east to I-5 and continue north to Seattle.
This is the most scenic route without a lot of time on very slow sections of highway other than the stretch up Hwy 1 from Morro Bay to Monterey, but the Big Sur coast is one of the most beautiful stretches of coastline in the world and not to be missed. You can go into the wine country around San Luis Obispo and east of Cambria and have a great experience without the crowds of the Napa/Sonoma area.
A book I highly recommend is California Camping by Tom Steinstra. It covers all of California and is organized by geographic area and unlike Woodalls you do not need to know the nearest town's name to find RV parks and campgrounds. Tom's book provides a great deal of up to date information on campground facilities and a scenic rating for camping areas and what is around to see and do.
I recommend the small towns like Cayucos and Cambria over the bigger cities like Santa Barbara and Monterey for places to stay and to explore. There are few nice RV parks around Monterey but a nice city owned and operated RV park in Watsonville that is less than a mile off Hwy 1 at Pinto Lake. There may be the option of staying in Monterey at the couty fairgrounds which are in town and would be quiter than the ones along Hwy 1.
