So we are planning to stay over at a Cracker Barrel for the first time this March when we head to Florida. How do you find water? Are there places that typically allow you to fill up 10-15 gallon...

You're close. Last year we left at 5am and we made it to the Comfort Suites Gateway by 9:30pm.
It was a long haul, but other than a slow down by Lake Norman, NC we cruised flawlessly.
It was great that my wife was willing to drive by mid-afternoon so I could rest for a couple of hours.
