Grundy Lake PP or similar park with good fishing

Grundy Lake and other PP's in that area are too close to Toronto and get booked up early. If you plan to cross at the Soo you may want to head north to Lake Superior provincial park or around the top of Superior. I'm not a fisherman but there are some great canoeing spots in LSPP and you will get into the parks easier. Maybe someone with fishing experience can comment. White Lake provincial park is also popular for the fishing crowd.
