The air bubble rises s-l-o-w-l-y with 100% honey. Adulterated honey the bubble rises much faster. The "honey" is thinner.
And this is common with honey I flipped in the USA. Of course very warm or very cold temperature influences the thickness of the honey but 60 - 80 degree honey is quit stable. The best way is to learn by flipping jars in a supermarket. Off the wall cheap honey is a good starting point.
