The route from Evergreen Colorado to Moab looks like it passes through some mountainous terrain. Can someone give me an idea of how the driving is through this area? This would be my first time driving this RV through mountainous terrain.

Just follow all the advice given and you should be fine -- be heading west on I-70 Answer Stay on I-70 through the City of Denver, little bumpy but otherwise if you avoid rush hours you will have an easy drive. Now for some insight -- Once west of Denver I always have enjoyed getting off at exit 265, Colorado Rt 58, which will take you somewhat parallel to I-70 and allow you to become surrounded by the Shear beauty that is Colorado, the Rocks and the Canyons (JMHO), In the last 10-15 years I have made it a habit to always drive (at least 50+times) in and out on Rt 6 to and from the west on I-70, Simply put, I might be crazy, but the reason I love Colorado is the Mountains, the Rocks and the Canyons and this is usually my first and generally one of my favorite drives into the Rocky Mountains. (Evergreen Wal*Mart might be fine but IMHO you would enjoy staying in Golden, Clear Creek, City RV park

My travel times generally avoid the rush hour traffic and are almost always a search to get to enjoy the Beauty that I have come to see. While you are in Glenwood Springs you will have the opportunity to also enjoy one of the nations most beautiful sections on the Interstate -- I-70 along the Colorado river with the over and under section that is just outside of Glenwood Springs, take the time to stop and enjoy, JMHO.
I hope you will also take the time to see Maroon Bells which is just south of I-70 outside of Aspen -- One of the most photographed areas in all of Colorado. Last If you continue on I-70 into Utah, Think hard about taking Utah RT 128 along the Colorado River (exit 214), This is another one of my all time favorite roads in America. It allows you to get right along the Colorado River and follow it into Moab, a drive I have been going out of my way to make for over 25 years, makes me feel like I am in the bottom of the Grand Canyon -- well almost.
Hope you are not totally confused -- again I-70 through Denver is EASY just avoid rush hour on all the roads in all the cities.
