I think it is six of one, half a dozen of the other. Different scenery but not that different. Taking 80 you bypass Denver completely Sunday Northbound on I25 should be fine unless you are talking the Sunday before the Eclipse they are already warning about very heavy traffic on 25, 85, 287 Fri, Sat Sun Mon and Tues here in Denver. 80 is also about 60 miles shorter
