Split the difference...and don't take either one.
Head up to St. Joseph and take US 36 across. It's a very pleasant drive and you can make pretty decent time, especially the further west you go. Yes, there are small towns, but in most cases it's just a very minor inconvenience. They are usually 30-40 miles apart and one can plan fuel stops, if needed.
When you get to St. Francis KS, take KS 27 north into Nebraska and then take US 34 all the way over to Loveland. There will be a small stretch between Brush and Wiggins CO where you will be on I-76. From Wiggins to Loveland is an easy drive, and it's relatively simple to get around Greeley on the US 34 bypass. Once you get to Loveland it should be a very easy drive north to Cheyenne.
I-25 north from the Denver Metro area, even on a Sunday, is not a pleasant drive. There's all the folks coming back from the mountains off the I-70 corridor, as well as the usual traffic to/from Denver. The electronic signs say it all...Heavy Weekend Traffic. Expect Delays and Slower Speeds.
