I-80 takes two northward loops that significantly increase your distance from SFO to Denver. One is the swing north toward Winnemucca. The other is the swing north out of SLC into Wyoming. The result is that you're traveling along a big letter "M."
It's much shorter to use US 50, I-15, US 6, and I-70. Yeah, the stretch through Nevada is desolate, but so what? You're in an RV. And Ely makes a decent waypoint to stop at, followed by a few hours of boredom to SLC.
