When I ask Google Maps for SLC to Coos Bay, the first 2 choices it gives us NV/OR 140. The third is I84/US20. I80 to Reno and US395 etc to I5 (by dragging a point) adds an hour or so to the drive. Since we are talking about a 15 hr, that hour doesn't make much difference.
So the shortest uses hwy 140, which is one of the more remote highways in the States (with a long stretch without gas). It's not a difficult road, though there is one rim drop near the state border that might scare some drivers (and delight hang gliders).
