It sounds to me that it is too expensive for you to travel to Mexico. You also don't recognize that the world does not revolve around you.
As a resident of Mexico I do not mind the toll rates as I am not required to pay taxes to support the road system, I only pay when I use the road. You also do not pay Mexican taxes so it is not wrong for you to pay for the roads when you use them.
As for the continued reduction to beaches.....as the property becomes more valuable the owners decide that the palapa that was there for decades probably on rented property was not the wave of the future. It sounds as though you only know what you have read online and don't have first hand knowledge of anything. The event you speak of was a relatively small event in one place in the Yucatan and has nothing to do with the rest of Mexico. Since you did not see the actual titles you don't have a dog in the legal fight, but if you want to use that to explain why you don't travel to Mexico that is your prerogative, just like it is the right of the RV manager to charge in whatever currency he wants.
At the end of the day it sounds like you should only go to places where you feel comfortable it seems. Maybe with an air of control of the situation.
As for me and my group we shall continue to explore - with wild abandon, all that Mexico has to offer without worrying ourselves with the minutia that we cannot control.
