As you near the top, let the speed bleed off and be down two or three gears as you crest the hill. As you start your descent, if your speed is being held or very slowly increasing, should be about right. Using the brakes a couple times isn't an issue. If you are having to use the throttle to maintain you speed, you can either shift up one gear or use the fuel depending on how you feel.
It's always better to be a gear or two lower than what you need as it is so easy to upshift, but the truck won't down shift if the rpms will go too high.
