Looking for route/camping help. (Utah, Vegas, California..)

Looking at heading to Salt Lake City, then loop out to Arches/Moab, Grand Canyon, Hoover Dam, Las Vegas (2 nights, possibly hotel). Then head over to San Diego, Anaheim (5? nights), Santa Barbara, Monterrey, Eureka..

Just looking for tips on how to break things up, and where to Camp. Thanks.
