Midway between NY and Los Angeles CA

New Mexico or Texas would be the best choice for half way. Little chance of snow but still may hit freezing temps depending on weather.

I would suggest Rockport or Port Port Aransas, Texas. Several nice campgrounds in the area.

If you want warm and convenient then you need to be along I-10. You also want to avoid elevation. So that means no further west than San Antonio, TX. Half way looks to be the LA/TX border. If you like big cities I suggest Houston, San Antonio or New Orleans. If you want small cities I suggest Beaumont, TX or Lafayette, LA. I have been to all those places in my RV and found interesting things to do in all of them.

Texas would be my choice - we enjoyed San Antonio and the Hill Country in the winter on a few trips - if you need the Gulf just head a little more South there are numerous options on the out Islands just outside Corpus Christi. Just google Camp Grounds Corpus Christi and you should be fine.

Just all depends on what works for you.

San Antonio is nice this time of year. Big town with lots to do and BBQ everywhere

Looking at Google map I would take I-95to South to just North of Jacksonville and then cut across to Lake City then take I-10 with a midway point being Jennings LA. and then either stay at Cajun Haven RV Park and Red Dog's Bar in Egan LA or you decide who is going to go a bit further to either San Antonio Texas or New Orleans LA.

Guarnteed there ain't no snow anywhere near San Antonio

If you want a lot of obvious "touristy" stuff then San Antonio....the river walk, mission trail with the Alamo, etc.
If you prefer to dig a bit deeper into local culture the southern Louisiana area might appeal to you...Cajun cooking everywhere, small historical towns like St. Martinville, driving along Bayou Teche.
Depends if you want your entertainment served to you or you enjoy finding it yourself.
We did have a white Christmas in Houston a few years ago. But I wouldn't bet on it happening again soon.
