I'm liking Plan Q without the west coast.
Consider an extra night in St. Louis and go to the Arch. Ride to the top, see great museum beneath, and take a riverboat ride from the dock there. Fun day for anybody.
Three days in Salt Lake seems a bit long.
You could accomplish plenty at Bryce or Zion in just 3 days, so might want to add onto Moab - there's a lot to see around there.
Consider including Monument Valley, Goblin State Park, Dead Horse Point State Park, Canyonlands NP, Capitol Reef NP.
I haven't been to T. Roosevelt NP, but maybe others can weigh in. Isn't five days too long?
