Town and country campground (formerly Travelers) on the ring road and TC junction in east Winnipeg is a good stop, the Mint is close by:

Riding Mountain NP, Elk Island NP are good stops, you may have to reserve though, they are busy in the summer.
We visited dinosaur provincial park years ago (south of Calgary) to see the badlands and displays
