Oregon to Florida and Return

I will be making a trip from Oregon to Southern Florida in January. As a new rv'er I am would like to know if anyone can recommend places to stay along the route. I am taking I-5 to I-10 and would like to plan safe and affordable stays. West Texas looks intimidating with very little between El Paso and San Antonio. Other issues are weather, fuel, safety etc. Any help would be greatly appreciated.

    Rouge - Texas has some pretty nice state parks, we enjoyed South Llano Park at Junction TX, interesting wildlife there and the sites are nice and level and paved. Goliad SP at Goliad TX has some good pull throughs but the smaller units are sent over to a big back-in area which wasn't very good IMHO. We also stayed at Stephen Austin SP, but I forget what it was like when we came through there in late November. Quartzite AZ is an interesting place if you like to boondock, just take your RV out into the BLM land and enjoy the peace and quiet.
