Depending on the size of the truck stop, yes you can usually overnight at them. Some have designated RV parking areas, but whether they can accommodate a truck/fiver combo will vary. You can try parking with the 18 wheelers, if they aren't full up, but we've had that discussion before. That's why they're called truck stops, and RVers should avoid taking up any trucker spots. Trucks will come and go and idle all night, so noise and diesel fumes may be a factor.
Big box stores are an option, like the obvious one (Walmart). They'll be signed regarding allowable overnight parking at the edges of their designated parking lot area.
Freeway rest areas will work as well. Same caveat about truck noise/fumes.
Use common sense, be creative, and you'll figure it out.
