Congrats on at least trying Mexico. I am not crazy about Rocky Point or the RV Parks there, but I am comparing it to the better places further south. Beats Yuma, IMO. However, its a good introduction to RVing in Mexico. From your description, it sounds like an RV caravan would suit you if you can afford one. Some will give a lower rate for singles (if they have room) and most mainland ones include Copper Canyon and go as far as Mazatlan or even Puerto Vallarta. Nice & safe for a single woman and lots of social contact, which is what I get the sense you are looking for.
There are a few operating on the mainland and a couple in Baja that have trips in Jan to Mar. From 30 days to over 60 days

I think Escapees also run one.
I saw at least 3 single women RVing in Mexico last year as far south as Guadalajara. I suspect few have that sort of bravery with all the negative stories you hear about Mexico, but it does show that it is possible.
