Documentation for any pets, credit card travel authorizations for travel outside your home state/country, how much cash you can take in, whether your Roadside Assistance program covers you in Mexico/Canada.
Check restrictions on what you can take into the countries - changes from fresh fruit and meats to pet food. Can take very limited liquor into Canada. You will need to check just before you try to enter or return to the US.
Does your health insurance/supplemental cover you or do you need to buy a additional coverage. Vehicles definitely will need Mexican Insurance before entry.
Extra parts you might want to carry such as gas/oil filters, spark plugs, etc
