SIMPLE Pastel Azteca "Aztec Cake"

The ingredients needed are simple, tortillas de maiz (corn tortillas) "DO NOT USE flower tortillas", refried beans, any good white melting cheese NOT American yellow cheese or Cheddar, Herdez salsa verde in a bottle.

In a deep oven pan place a layer of tortillas, then a layer of frijoles refritos, a layer of cheese and some salsa verde, continue with a layer of tortillas, frijoles, cheese and salsa until you reach the rim.

Place in the oven at 350*F bake until the top layer of the cheese begins to brown, cut into portions and serve with good Mexican beer, it is best not to use light **** beer, the taste will be ruined, now you have a simple but appetizing "Pastel Azteca".

NOTE place a catch pan under the baking pan to catch the overflow

  • Just added that to our recipe folder. Thanks! Mexican friends from PV arrive in 5 weeks for a three week visit--first time to Canada for them. Might try this on them!
  • Panela cheese can not be found in many markets in Canada or the USA so just any mild melting cheese will work, not real Mexican but more TexMex, quik and simple, tortillas are ready to eat so are the beans, cheese and salsa, just need heat to melt cheese, a si es, buen provecho.

  • Panela is readily available in the Mexican markets here in Calif. like Vallartas market.
