The only major climb on I-26 or I-40 going that way would be just inside NC, Saluda Grade. It's 4 miles of 6%, fairly straight. There are some more up 'n downs just past there, but the only one of any significance is at Green River, just south of US 25. It's a little less than a mile of 7%, down & back up.
I-40 into Tenn follows Pigeon River Gorge thru the Smokys, so the grades are gentle, but the road is quite curvy for a bit over 20 miles.
