It can of course be done. You can do the math on miles per day you want to tackle on the way there and back. I would opt to plan on using the full three weeks. 1/3 time to get there, 1/3 time there, 1/3 time to get back. There are a lot of blanks spaces in your map you could fill in and make the trip more than seeing how many miles can I do before I drop. There's a lot to see and enjoy.
