I second Hacienda RV park in Las Cruces. We stayed there in September and it was a beautiful park with good access to the interstate. While you're there, take short drive over to Mesilla and visit La Posta De Mesilla restaurant for some great Mexican style food. Just get there early because the wait can be quite lengthy.
If you don't head to Carlsbad, you can make your second stop at Fort Stockton RV park in Fort Stockton Texas. This is a very clean and well run park.
